Four simple dinners to cook when you're feeling low on energy

Cooking can be extra challenging when you're low on energy.

So, we've pulled together some of our simplest dinner recipes for when you're under the weather, caring for others, or busy.

Think pantry-based meals with very little washing up.

One-pot tuna pasta

Tuna pasta is a weeknight staple and this version involves just one pan. The spaghetti cooks lying flat in a combination of stock and water, before other ingredients are added. The starch of the pasta helps to form a simple, silky sauce.

Lentil and potato soup

This soul-warming classic is a traditional Lebanese lentil soup, also known as Shorbat Adas bil Hamod. It's a simple recipe made with wholesome ingredients. It's finished with a tangy squeeze of lemon juice.

Stovetop shakshuka with crumbled feta

Grab a tin of diced tomatoes and some eggs and make shakshuka — poached eggs in a spicy tomato sauce. Add chilli flakes for extra heat and adjust the number of eggs as needed. Serve with crumbled feta and hot pita bread or a toasted baguette.

Baked potatoes are a great option in winter — they're comforting and so easy to prepare. While foil-wrapped potatoes bake, make a simple tomato topping enriched with anchovies, then serve with butter, sour cream, cheese and chives.
